Chocolate Zucchini Cake

Zucchini in cake?! Well it works! Sharing this yummy dessert at a family gathering is sure to leave people wondering if you’re a witch or a genius.

Ingredients
  • ½ cup soft Margarine or Butter (1 stick)
  • ½ cup Cooking Oil
  • 1¾ cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 1 cup Sour Milk
  • 4 Tbsp Cocoa
  • 2½ cup Flour
  • ½ tsp Baking Powder
  • 1 tsp Baking Soda
  • ⅛ tsp Salt
  • 2 cup Grated Zucchini (with peelings)
  • ½ cup Mini Chocolate Chips
Directions
  1. Preheat oven to 350°
  2. Cream the butter and oil together
  3. Add sugar, eggs, and vanilla, then mix well
  4. Add sour milk and mix well
  5. Add cocoa, flour, baking powder, baking soda, and salt
  6. Mix all together
  7. Add grated zucchini and mix well
  8. Pour into 9 x 13 greased and floured pan
  9. Sprinkle top with chocolate chips
  10. (Optional) Add nuts on top
  11. Bake for 40-50 minutes
  12. Let it cool before cutting
