Cookie Cake

I know what you’re thinking… “Where are the cookies?” I’m sorry to say that I don’t know either but I’m happy to say that I don’t care because it is delicious!

Ingredients

Cake:

  • 1 cup Water
  • 1 cup of Margarine or Butter (2 sticks*)
  • 4 Tbsp Cocoa
  • 2 cup Flour
  • 2 cup Sugar
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • ½ cup Buttermilk
  • 2 Eggs
  • 1 tsp Vanilla

Frosting:

  • ½ cup Margarine or Butter (1 stick*)
  • 6 Tbsp Milk
  • 4 Tbsp Cocoa
  • 3 ½ cup Powdered Sugar
  • 3 tsp Vanilla
Directions

Cake:

  1. Preheat oven to 400°
  2. Stir and boil the first three ingredients together
  3. Let mixture cool until it is still warm
  4. Then add next four, dry ingredients and mix well
  5. Add the next three ingredients and mix well
  6. Pour into greased and floured 12×18 pan
  7. Bake for 12-14 minutes

Frosting:

  1. While cake is baking, bring the first three frosting ingredients to a boil
  2. Pour liquid mixture into the powdered sugar and add vanilla
  3. Mix well and until the mixture is smooth
  4. Frost the cake while warm
  5. (Optional) Add chopped nuts, coconut, or chocolate chips on the frosting while it is still warm
