Date Pinwheels

A family favorite! Enjoy the naturally sweet flavor of dates rolled into soft chewy dough.

Ingredients
  • 1 – 8 oz pkg of chopped dates
  • 1 – 8 oz pkg of chopped dates
  • ½ cup Water
  • 1 tbsp Lemon Juice
  • ½ cup Finely Chopped Walnuts or Pecans
  • ½ cup Margarine or Butter
  • ¾ cup Brown Sugar
  • 1 Egg
  • ½ tsp Vanilla
  • 2 cup Flour
  • ½ tsp Baking Powder
  • ½ tsp Salt
Directions
  1. Preheat oven to 375°
  2. Combine first 3 ingredients into a saucepan
  3. Bring to a boil and simmer for 3 – 4 minutes, stirring frequently, until it is thick
  4. Add in the nuts and mix well
  5. Let it cool
  6. To make the dough, cream together the butter and the sugar
  7. When well mixed, add the egg and vanilla, then mix until smooth
  8. Add the rest of the ingredients and mix well
  9. Let it chill in the refrigerator for 1 hour
  10. Next, divide the dough in half
  11. Roll both halves of the dough to roughly 11 x 7 inch sheets
  12. Spread date mixture on both halves
  13. Carefully roll up the dough into a roll
  14. Wrap the rolls, place them on a cookie sheet, and freeze
  15. When ready to bake, remove the roll from the freezer and slice the it into roughly ¼ inch thick coins
  16. Place on lightly greased cookie sheet 2 inches apart
  17. Bake for 10 – 12 minutes
