Ingredients
- 1 – 8 oz pkg of chopped dates
- 1 – 8 oz pkg of chopped dates
- ½ cup Water
- 1 tbsp Lemon Juice
- ½ cup Finely Chopped Walnuts or Pecans
- ½ cup Margarine or Butter
- ¾ cup Brown Sugar
- 1 Egg
- ½ tsp Vanilla
- 2 cup Flour
- ½ tsp Baking Powder
- ½ tsp Salt
Directions
- Preheat oven to 375°
- Combine first 3 ingredients into a saucepan
- Bring to a boil and simmer for 3 – 4 minutes, stirring frequently, until it is thick
- Add in the nuts and mix well
- Let it cool
- To make the dough, cream together the butter and the sugar
- When well mixed, add the egg and vanilla, then mix until smooth
- Add the rest of the ingredients and mix well
- Let it chill in the refrigerator for 1 hour
- Next, divide the dough in half
- Roll both halves of the dough to roughly 11 x 7 inch sheets
- Spread date mixture on both halves
- Carefully roll up the dough into a roll
- Wrap the rolls, place them on a cookie sheet, and freeze
- When ready to bake, remove the roll from the freezer and slice the it into roughly ¼ inch thick coins
- Place on lightly greased cookie sheet 2 inches apart
- Bake for 10 – 12 minutes
