Ingredients
Cake:
- 1¼ cup Boiling Water
- 1 cup Uncooked Oats
- ½ cup Softened Butter
- 1 cup Sugar
- 1 cup Brown Sugar
- 1 tsp Vanilla
- 2 Eggs
- 1½ cup Flour
- 1 tsp Baking Soda
- ¾ tsp Cinnamon
- ½ tsp Salt
- ¼ tsp Nutmeg
Frosting:
- ¼ cup Melted Butter
- ½ cup Brown Sugar
- 3 Tbsp Cream (or half and half)
- ½ cup Chopped Nuts
- ¾ cup Coconut
Directions
Cake:
- Preheat oven to 350°
- In a small bowl add the oatmeal and the boiling water
- Let sit for 20 minutes
- While waiting, mix the next three ingredients in a large mixing bowl
- Then add the next two ingredients and mix together well
- Add the oats to the large mixing bowl and mix together well
- Add the remaining ingredients and stir well
- Pour into a 9 x 13 greased and floured pan
- Bake for 50 – 60 minutes
Frosting:
- Combine all ingredients together and mix well
- Spread over the cake, while the cake is still warm
- Turn the oven to broil and put cake in the broiler until the frosting starts to bubble and lightly brown
