Lazy Daisy Oatmeal Cake

Ingredients

Cake:

  • 1¼ cup Boiling Water
  • 1 cup Uncooked Oats
  • ½ cup Softened Butter
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1 tsp Vanilla
  • 2 Eggs
  • 1½ cup Flour
  • 1 tsp Baking Soda
  • ¾ tsp Cinnamon
  • ½ tsp Salt
  • ¼ tsp Nutmeg

Frosting:

  • ¼ cup Melted Butter
  • ½ cup Brown Sugar
  • 3 Tbsp Cream (or half and half)
  • ½ cup Chopped Nuts
  • ¾ cup Coconut
Directions

Cake:

  1. Preheat oven to 350°
  2. In a small bowl add the oatmeal and the boiling water
  3. Let sit for 20 minutes
  4. While waiting, mix the next three ingredients in a large mixing bowl
  5. Then add the next two ingredients and mix together well
  6. Add the oats to the large mixing bowl and mix together well
  7. Add the remaining ingredients and stir well
  8. Pour into a 9 x 13 greased and floured pan
  9. Bake for 50 –  60 minutes

Frosting:

  1. Combine all ingredients together and mix well
  2. Spread over the cake, while the cake is still warm
  3. Turn the oven to broil and put cake in the broiler until the frosting starts to bubble and lightly brown
