Ingredients
- ⅔ cup Cooking Oil
- 1 cup Sugar
- 1 cup Cider Vinegar
- 1 – 15 oz can Pinto Beans
- 1 – 15 oz can Black Beans
- 1 – 15 oz can Black Eyed Peas
- 1 – 11 oz can White Shoepeg Corn
- 1 Green Pepper
- 1 Red Pepper
- 4 Stalks Celery
- 1 small Red Onion
- Jalapeños (Add to taste)
Directions
- Mix first three ingredients in a large mixing bowl
- Let set until ingredients dissolve
- While waiting, drain and rinse the next four ingredients in a collider
- Finely chop the next 4 ingredients
- Mix everything together and let it marinate for at least 6 hours
- Drain off some of the juice prior to serving
- Serve with Tostitos Scoops
