Texas Caviar

What is healthy, delicious, and incredibly easy to make? That’s right, it’s Texas Caviar!

Ingredients
  • ⅔ cup Cooking Oil
  • 1 cup Sugar
  • 1 cup Cider Vinegar
  • 1 – 15 oz can Pinto Beans
  • 1 – 15 oz can Black Beans
  • 1 – 15 oz can Black Eyed Peas
  • 1 – 11 oz can White Shoepeg Corn
  • 1 Green Pepper
  • 1 Red Pepper
  • 4 Stalks Celery
  • 1 small Red Onion
  • Jalapeños (Add to taste)
Directions
  1. Mix first three ingredients in a large mixing bowl
  2. Let set until ingredients dissolve
  3. While waiting, drain and rinse the next four ingredients in a collider
  4. Finely chop the next 4 ingredients
  5. Mix everything together and let it marinate for at least 6 hours
  6. Drain off some of the juice prior to serving
  7. Serve with Tostitos Scoops
